Dr. Richard Cuenca’s Friday Letter: First-Ever K-12 Kosher Culinary Institute

Dear Posnack School Community,

The David Posnack Jewish Day School is proud to announce the opening of the Kosher Culinary Institute at the Posnack School. After years of planning, this innovative concept brings the world’s first-ever kosher culinary institute to a K-12 Jewish day school.

This exciting new concept in school nutrition is founded on the belief that a healthy lifestyle is critically important to a child’s growth and development. The Institute’s priority will be to find the healthiest ingredients – from the best sources. This means emphasizing locally grown, organic produce, and supporting small farms and orchards. Each day will bring a new menu, carefully-crafted from scratch to include numerous savory dishes all presented in ways that are enticing and child-friendly.

Included within the design of the new Culinary Institute will be cutting-edge video technology that will allow our caterer to offer exciting cooking demonstrations to our students and parents. Kosher cooking classes, special Jewish holiday culinary programs, and more are all part of the Culinary Institute experience. Getting ready for the Jewish holidays will never be the same!

The Culinary Institute’s state-of the-art, all-stainless-steel kitchen design will meet the exacting standards of our expert chefs and spark our students’ imagination and discovery. The innovative, open-kitchen will offer students hands-on math and science lessons, allowing them to discover fractions and measurement, chemistry and physics in ways that enhance comprehension and retention of important academic skills.

The new Culinary Institute will be directed by Emmanuel Codron. Chef Codron previously owned Food Art, one of Europe’s largest and top-ranked gourmet kosher catering companies. Food Art catered events throughout the continent for large multinational companies, foreign dignitaries, and heads of state. In addition to being the leading gourmet kosher catering company in Europe, Food Art also provided lunch services to two of the largest Jewish schools in Brussels. For three years running, Food Art was named the #1 caterer for healthiest lunch programs among all the private schools in Brussels.
